atsu Wok-Pan

A hand-hammered Japanese iron wok with a flat base, built for home stoves and five cooking methods

Editor’s view

Why it matters

Fried rice that turns sticky, stir-fried vegetables that go watery, ingredients flying over the rim of a shallow skillet: the atsu Wok-Pan is pitched at home cooks who want wok-style cooking without a restaurant kitchen. The maker describes it as an iron Wok-Pan that narrows the gap between everyday cooking and proper wok technique.

Wok curves, flat-bottom stability

The core idea is a rounded, rising wok shape with enough depth to toss and turn food inside the pan rather than over the edge. The maker gives the diameter as 10.6 inches (approx. 26.9cm), and the base is flattened for stability, keeping the character of a round-bottom wok while sitting more easily on a home cooktop. It is listed as compatible with IH, gas, electric and radiant heaters, so the maker positions it as an option for kitchens without a gas flame.

Hammered by hand

The fine dimpled surface is the pan's signature: hammer marks left by skilled Japanese wok craftsmen who shape each piece by hand, according to the maker. The pan weighs approx. 2.3 lb (approx. 1.04kg) and is fitted with what the maker calls a sturdy, compact handle, aiming for a balance that suits daily use.

Bare iron that develops with use

There is no Teflon coating. The maker says the pure iron construction is durable enough for metal spatulas, and the pan arrives pre-seasoned, though seasoning before first use is still recommended. With repeated cooking, oil builds up on the surface for natural release. The trade-off is maintenance: iron can rust if left wet, so the maker advises drying it thoroughly after washing and applying a thin coat of cooking oil.

The atsu Wok-Pan is presented as a Kickstarter project whose stated aim is to make authentic wok cooking accessible to more households.
