Why it matters

Nitro drinks have spread from café menus to bar lists, but making them at home has typically meant buying replacement cartridges or finding room for specialist equipment. XBREW's EverNitro takes a different route: the maker says it generates nitrogen from ambient air, and uses that gas for nitro drinks, whipped cream and food preservation in a single unit. According to XBREW, its team includes engineers and coffee enthusiasts with experience at companies such as DJI and Breville.

Nitrogen from air

The core of the machine is PSA (Pressure Swing Adsorption), a method used in medical oxygen production and in the food industry, which strips oxygen, moisture and dust from air to isolate nitrogen. In EverNitro, two molecular sieves alternate, one adsorbing while the other regenerates, to supply a continuous stream of 95% purity nitrogen, the maker says. With no steel cartridges, there are no cartridge purchases or cartridge waste. XBREW claims the higher purity slows oxidation, preserves aroma, softens acidity and bitterness, and produces finer bubbles for a creamy, Guinness-like texture and longer-lasting foam.

Modes and control

Digital pressure control adjusts output between 0 and 8 bar, from a light, fizzy foam to a dense, velvety one. Two modes trade speed for purity: Fast mode produces 78% purity nitrogen in 25 seconds, signalled by a lightning icon, while High Pure mode takes 60 seconds to reach 90–95% purity, indicated by a bubble icon. An on-device display shows pressure, gas purity and machine status in real time, and a companion app stores presets such as 5 bar for cold brew. The maker also lists OTA software updates and an energy-saving feature that turns off the lights and fan after 10 minutes of inactivity.

Three functions, one footprint

  • Nitro drinks: cold brew, matcha, kombucha, cocktails such as an espresso martini, and beer
  • Whipped cream: nitrogen-aerated cream for cakes and fruit
  • Food preservation: displacing oxygen in containers to help keep coffee beans and herbs fresh

Design and upkeep

The machine has two ambient lights, one at the gas outlet showing operating status and a base light, both adjustable in brightness and colour temperature through the app. The removable canister, nozzle and storage jar are dishwasher-safe, according to XBREW, and the internal dust filter is rated for 4–5 years, with the machine alerting users when replacement is due. EverNitro supports 100V–240V input with a certified power adapter, and the campaign states that backers choose a plug type (Type B, C, G or I) in a post-campaign survey, covering regions including Japan, the US, UK, EU and AU.
